We’ve been asked quite a few questions about our sweet potato pie lately. It is really tasty, but people really want to know why it doesn’t taste like the pie they make at home. As is the answer here so often… smoke! We smoke those monster sweet potatoes, some just for the pies. It really adds something flavor profile-wise, and we did some blind tests with potatoes that were baked only in the oven. The smokiness, while barely discernable, really adds something.
